You may remember that I shared a recipe for Gnocchi and Sweet Potato Soup last week. Well, I still had one lonely sweet potato sitting around the house from that recipe. I had been trying to figure out what to do with just one when the craving for biscuits hit me. I immediately turned to Pinterest and found a great looking recipe from Can’t Stay Out of the Kitchen for sweet potato biscuits. I was really looking forward to trying the recipe, especially since it was based on one from Paula Deen. I started off by peeling my sweet potato, cubing it, and boiling it for about 10 minutes. While my potato was boiling, I measured out the flour, sugar, salt, and baking powder into a bowl and mixed well. Once my sweet potato was cooked, I drained the water and dumped the cubes into my big glass measuring cup. Then, I mashed it with a fork. After mashing the potato, I added the butter like the recipe called for and stirred until it was melted. Next, I combined the flour mixture with the sweet potato and butter mix and stirred well. This took a bit of work to get all the flour absorbed by the sweet potato. Next, I added the milk one tablespoon at a time, mixing well after each addition. I ended up only needing the one tablespoon. Once my sweet potato biscuits were mixed up, I dumped out the dough onto my floured counter and kneaded as instructed. The directions say it will take 1 to 2 minutes, but it only took me about 2 or 3 turns of the dough on the well floured surface to get a nice biscuit consistency. After that, I rolled out the dough to about 1/4 to 1/2 inch thick. One inch just seemed far to thick to me. I cut the dough using a wine glass dipped in some flour and ended up with 8 biscuits. I decided to skip brushing melted butter across the top of my sweet potato biscuits and popped my tray in the oven on the top rack for 10 minutes. I really should have left them in for about 8 minutes, but I went for 10 since the instructions said 10 – 15 originally. They turned out a little dark, but really, really yummy. They were far better than I had expected! I definitely plan to use this recipe again, but I might try to cut back on the sugar just a little bit since I probably eat too much sugar anyway. I really encourage you to try this recipe for sweet potato biscuits as its truly spectacular and very easy to make!
Ingredients
- 1 ¼ cups flour
- 2 heaping tbsp sugar
- 4 tsp baking powder
- 1/2 tsp salt
- ¼ cup butter
- 2 - 4 tbsp milk
- 1 cup mashed, cooked sweet potatoes
Instructions
- Preheat the oven to 450 F.
- Peeling cube the sweet potato and boil it for about 10 minutes, or until soft.
- Meanwhile, combine the flour, sugar, salt, and baking powder into a bowl and mix well.
- Once the sweet potato is cooked, drain the water and mash in a bowl with a fork or potato masher.
- After mashing the potato, add the butter and stirred until melted.
- Next, combine the flour mixture with the sweet potato and butter mixture and stir well. This may take a bit of work to get all the flour absorbed by the sweet potato.
- Now, add the milk one tablespoon at a time, mixing well after each addition. Stop when the mix is wet looking and sticks to the spoon.
- Turn out the dough onto a well floured surface and knead until you get a smooth ball. This shouldn't take long.
- Rolled out the dough to about 1/4 to 1/2 inch thickness and cut with a biscuit cutter, wine glass, or other circular instrument.
- Bake near the top of the oven for 8 to 12 minutes or until the tops start to brown.
